Spicy New Years Party Dip

This dip is quite possibly one of the best snack food recipes I have ever done, it is perfect as a new years dip or the rest of the year for that matter.
I normally pair it with tortilla chips, because it goes well with the mexican flavours from the chipotle paste, but honestly it will go great with carrot or celery sticks, other crisps or even as a salad dressing.
Only downside, that once you start eating, it is very hard to stop.

200g Cream Cheese (I use Lactofree, but Philadelphia is great too)
2 teaspoons chipotle paste (found in most supermarkets. I use the Santa Maria brand)
1-2 cloves of garlic pressed
1 tablespoon lemon juice
1 big handful of parsley
salt and pepper

Simply blend the cream cheese, chipotle paste, pressed garlic and lemon juice, until well combined.
Then add the parsley and pulls a few times, just for it to be chopped, but not blended. (Alternatively, chop the parsley finely by hand and add instead.)
Add salt, pepper and more lemon juice to taste.
Place in the fridge for a few hours or over night to thicken up a bit.
